This is a traditional Bulgarian dish, which my Mum has spiced up with curry powder.
Ingredients
1 large onion, coarsely chopped
2-3 tbsp water
250 g mushrooms, cut in 1 cm cubes
2 dl rice
4 dl water
2 chicken breast fillets, each cut in 3 -4 smaller pieces
salt, pepper and curry powder
a little oil for frying
Method
- Brown the chicken in the oil lightly to seal it and place in deep baking dish.
- In the same oil, fry the onion. Add a couple of tablespoons of water, this will prevent the onion from burning.
- When the onion i soft, add the rice, stir well, to get it coated with the oil, then add the 4 dl water. Bring to the boil and let simmer until all liquid has been absorbed.
- Pre-heat the oven to 200 °C (not fan).
- Add the mushrooms, salt, pepper and curry powder to taste and stir well.
- Cover the pieces of chicken with the rice mix, add a bit more water if it looks too dry.
- Cover the baking dish with aluminium foil and bake for 30-40 minutes.
This dish can be frozen. For a vegetarian version, add peas, carrots and courgettes instead of chicken. It can also be nice if baked with cheese on top, au gratin.
